Job Overview:
The Product Development Lab Specialist will be responsible for the execution validation studies for new and existing products. Additionally, the incumbent will be responsible for creating purchase orders and other administrative functions for PD.
Key Responsibilities:
- Perform own Shelf Life testing, attending tastings, collating and distributing data, and advising of next steps based on outcome of testing
- Support the formulating, scaling, baking and packaging of lab & customer samples, independently maintaining TVC & PDS records for formulation records, accurate costing, and Critical to Quality Points
- Troubleshoot when necessary to ensure product success
- Record and analyze shelf life studies, recommend action plan for shelf life studies & test raw material substitutes for existing products
- Observe all SQF and HACCP policies
- Assist Product Developers and Tech Services when required
- Create purchase orders for items in the lab and new materials required for plant trials
- Conduct lab trials comparing the alternative ingredients with the control
- Conduct validation tests: perform sensory evaluation using the sensory evaluation techniques, chemical and physical tests
- Evaluate raw material specifications
Recipe for Success:
- Strong problem solving and decision-making skills
- Good understanding of GMP, HACCP, GFSI (BRC, SQF) and Food Allergens
- Have good working knowledge of word, excel, power point and outlook
- Excellent organizational skills with the ability to prioritize task, delegate and follow up
- Previous experience working within the Food Manufacturing industry
- Comprehensive understanding of commercial bakery ingredients, production processes and equipment capability
- Ability to lead, work independently, and in a team environment
- Minimum 4 years experience in a as a Chef, Baker, or Pastry Chef
- Completion of College Diploma or University Degree in Food Science or a related field
