Second Cook

The Second Cook is responsible for the preparation and delivery of food to guests as a part of the day to day food service staff. Works with First Cook, Chef, Camp Manager and kitchen staff to continually improve guest satisfaction while maintaining inventory and sanitation levels and provide kitchen maintenance and cleaning.

Roles & Responsibilities

• Perform other duties as assigned.
• Ensure compliance with all safety regulations of assigned tasks.
• Ensure station opening and closing procedures are carried out to standard.
• Report all deficiencies in kitchen equipment functionality and quality of food products to chef in a timely manner.
• Ensure the proper rotation, labeling, and storing to keep food waste at a minimum.
• Ensure a clean and safe working environment with active participation in the camp health and safety program.
• Preparing and replenishing salad and sandwich stations.
• Clean, peel, slice, and trim food items using manual and electric appliances
• Keep work stations clean and organized including fridges/freezers, counter tops and stove tops.
• Prepare the necessary food items as directed by the Chef/1st Cook in accordance with standards and in a timely and efficient manner.
• Adhere to standardized recipes and specifications to maintain consistency and ensure all standards are met.
• Ensure that all food products are handled, stored, prepared and served safely in accordance with hotel and government Food Safety guidelines.
• Prepare and serves client at steam tables and on the food line

• Ability to read, write, and speak English.

Qualifications & Certification

• Petroleum Safety Training or Construction Safety Training System.
• A strong commitment to safety and safe work practices
• WHMIS and OFA Level 1 an asset
• Food Safe Level 2
• 2+ year's food service experience as a 2nd Cook preferably in a large remote camp environment.
• Pre-employment Drug and Alcohol test required
