Job Description
Peak Cellars is looking for a Sous Chef to join our incredible team of food lovers. Located in Lake Country, BC, Peak Cellars has a ½ acre garden with two greenhouses and berry bushes that our Garden Bistro uses to prepare dishes with newly-harvested ingredients. Description


Reporting to the Chef de Cuisine, the duties of a Sous Chef include assisting in day-to-day culinary operations such as menu creation, food purchasing, and maintnanence of quality standards.


Responsibilities


Responsibilities of a Sous Chef include, but are not limited to


  • Assist in training, support and monitoring of all culinary team experiences
  • Oversee and maintain cleaning schedule; ensure team are following daily cleanliness procedures
  • Execute and support the vision of the Chef onto the plate
  • Operating, maintenance and cleanliness of kitchen appliances and surfaces
  • Set up and tear down prep station for service
  • Maintain communication with the Chef on all things kitchen related
  • Positive and constructive communication among team members
  • Ability to teach and motivate young cooks
  • Past history of ordering systems
  • In absence of Chef, ordering of food/supplies
  • Preparation of weekly food/supplies requirements to Chef
  • Adherence to all other relevant company policies
  • Follow recipes, procedures & presentation according to Chef’s guidelines
  • Oversee records of cooler, freezer, dishwasher temperatures and wastage
  • Food preparation, arrangement and plating of dishes


Requirements


  • WHMIS
  • 5 years’ experience required
  • Food Safe
  • Set of knives
  • Red Seal Certification or equivalent
