About The Opportunity

The Kitchen Manager is responsible for the back of house operations including all food production for the newly renovated Dockside Restaurant and cruise line cuisine, development of menus, food purchase specifications and recipes. The Kitchen Manager is also responsible for maintaining food and labour costs, maintaining all company standards and adherence to all safety and hygiene policies and procedures while contributing to a safe and welcome work environment for all employees.

Essential Duties & Responsibilities

• Responsible for replying to work related emails and text messages in timely fashion, while on shift
• Ensuring that food and labour cost is matching the targets set by management
• Support kitchen operations by performing daily cook duties when additional coverage is required, or volumes are at a peak
• Leads by example; maintains highest level of professionalism, integrity, and sound work habits
• Provides and communicates pre-shift meetings daily for on-site staff, participates in all relevant meetings based on invitation
• Keeps food waste to a minimum, ensuring proper rotation, labelling, and storing of all food products
• Follow all food safe handling procedures, regulatory and ministry compliance
• Works with a safety mindset by ensuring employees follow all safety policies and procedures. Takes responsibility and accountability for the prevention of work-related injuries and/or illness by identifying and communicating risks, hazards and opportunities on the job. Provides necessary measures (i.e. PPE) and works closely with F&B Manager to allocate resources to keep the workplace safe.
• Ensure that all food products are handed, prepared, and served in accordance with food safety guidelines
• Ensure kitchen is clean, and organized
• Responsible for the ordering and inventory of food and kitchen supplies
• Follow all policies and standards
• Work in collaboration with Regional Accounting Team on inventory, budgets, reporting and reconciliation of Food & Beverage Department
• Enhances the City Cruises name and reputation by delivering quality service and adhering to the Crew Handbook
• Ensuring opening and closing duties are completed daily
• Conducts inventory counts as required and restock all items
• Completes administrative tasks including daily reports, paperwork and invoices on a timely basis
• Maintain open communication with management and employees to ensure a positive work environment and high levels of engagement
• Works with F&B Manager to manage back-of-the-house staff, including recruitment, training, coaching/discipline, and retention
• Ensure that the morale of the kitchen staff is maintained by practicing positive strategies to motivate staff, encourage self-esteem and efficiency
• Ensures equipment is maintained and in good working condition (stoves, fans, freezers, etc.)
• Work in a manner to ensure continuous improvement and quality within the department

Requirements & Qualifications

• Demonstrated ability to manage multiple priorities/tasks
• Ability to reach, bend, stoop, wipe, push, pull, move or lift up to 35 pounds (16 kilograms)
• If required, wear assigned Personal Protective Equipment (PPE) (i.e. non-slip shoes, gloves, weather appropriate dress attire, sun protection)
• Minimum of one (1) year of kitchen supervision experience preferred
• Moderate computer skills are essential; will frequently work with Microsoft office products as well as point of sale system and web-based applications.
• Smart Serve Certificate required
• O.S.S.D or equivalent as recognized by the Ministry of Education preferred
• Full G driver’s license with a clean driver’s abstract
• Will be required to be available for work on all major holidays, weekends and evenings
• Hospitality or Culinary degree preferred
• Food Handler’s Certificate required
