Job Description

Hank’s will open in Duncan, summer 2023. Construction is currently underway in our 2500 sq ft space, located right on the highway just south of Duncan BC. Our goal is to provide grab and go food including but not limited to; fresh breads, baked goods, sandwiches, deli items such as pâté and cheeses, coffee as well as cater to the local businesses and provide a small retail section to showcase the best food products of the Cowichan Valley. Our business is made up of 3 owners - Louise Pickles (currently owner operator of www.picklespantry.ca, chef of 25 years), Aaron Walsh (project manager, chef of 20 years) and Dana Meiner (owner operator of Peaks Coffee in the Cowichan Valley). We have designed this kitchen from scratch, and are putting in all the upgrades required to service brand new high end baking and cooking equipment such as; the Bassanina Zoom 1212 Deck Oven, iCombi Pro Rational Oven, Bongard Retarder Proofer, and Esmach 80 kg Spiral Mixer. All meant to service a high volume of great quality breads and other culinary delights.

We are looking for a head baker to join our team. This person will have full reign over the bakery department with the ability to write menus, choose ingredients and create products of their own, train staff and help manage the overall operation of Hanks! JOB DESCRIPTION


The Head Baker will be responsible for overseeing all aspects of the baking department, and the production of all baked items including but not limited to; artisan sourdough and traditional breads (pan loaves, boules, baguettes, flatbreads, focaccia, rolls, bagels, english muffins etc), laminated doughs (puff pastry, croissant dough), muffins, scones, cookies, tart doughs, sweet and savoury fillings etc.


RESPONSIBILITIES


  • Daily, weekly and monthly menu production making use of what is available or in season in accordance with food cost and budgetary guidelines
  • Maintain equipment to the highest standard of cleanliness and report maintenance issues
  • Ensure department and all stations are kept clean and organised at all times (this is a completely open plan kitchen!!)
  • Oversee, manage, and train a number of staff and quality control of their production
  • Food costing and labour management
  • Assist when necessary to help out with food service or act in a managerial capacity for the entire operation in absence of Louise / Aaron.
  • Assist with special events
  • Ordering and inventory of all items as related to the bakery department
  • Oversee and ensure that all Foodsafe and Sanitation requirements are being followed including batch logging, food prep logging, sanitation logging, FIFO procedures



EDUCATIONAL REQUIREMENT


  • Foodsafe Level 1
  • 3-5 years in a similar position
  • Red Seal Certification



SKILLS AND QUALIFICATIONS


  • Willing to work longer shifts when necessary, weekends, and holidays.
  • Can lift heavy things like garbage bags and bags of flour;
  • Has high stamina and can handle long and busy days on their feet;
  • Knowledge of general bakery equipment, how to operate and maintain the latest technology in baking (proofer retarder, dough sheeter, rational combi oven, zoom 1212 deck oven with loader)
  • Works well either in a team or alone; and
  • Must be friendly and courteous;
